NIBBLES – Summer Salad Recipes

Happy Thursday lovelies!  And welcome to a new series I’ll be starting on the blog – Nibbles.  It’ll include recipes and restaurant reviews, as well as any other food related news.

So to start off the first Nibbles blog post, I thought I’d do some tasty summer salad recipes, to help all of you who are trying to shake off the Christmas season excess.

Caprese salad with a twist

A regular Caprese salad.

I’ve always loved the regular Caprese salad – mozzarella, basil and tomato, thinly sliced and drizzled with olive oil and balsamic vinegar.  But one day, browsing Estée Lalonde’s channel on Youtube, I saw she had a video called Salads That Don’t Suck.  Intrigued, I gave it a watch and found a version with peach.  I don’t really follow the recipe exactly, but basically just throw together the ingredients.

Peaches, sliced
Mozzarella, sliced
Basil leaves
Almonds, crushed
Balsamic reduction

Just layer the slices of peach, mozzarella and basil leaves, drizzle with the balsamic reduction, and sprinkle the crushed almonds over the top.  Then, tuck in!

Strawberry, avo, rocket and feta salad

Strawberries
Ripe avocados
Feta cheese (preferably Danish feta)
Rocket

Chop up all of the ingredients and drizzle with balsamic vinegar.  Delish!

Apple and Cheese salad

Apples (Pink Lady are great for this!)
Cheddar cheese
Dried cranberries
Pecans
Cooked bacon bits
Mayonnaise (best to use a tangy mayo)

Chop up all of the ingredients, place in a bowl and mix the mayonnaise in.

And that’s it!  These salads are all great for pairing with a braai, with some grilled chicken pieces, steamed fish or even just on their own.

    Buffalo Mozzarella…droooll…love caprese salads! And adding peach is a lovely sweet twist with almonds for crunch!
