Low Carb Cheeseburger Casserole

An absolutely delicious take on a cheeseburger for those staying away from carbs. In fact, as a South African, the best way to explain it is like a cheeseburger bobotie.

Ingredients
  

  • 3 pounds beef mince (This is roughly 1,36kg) (I bought 2/3rds of it as extra lean beef mince and 1/3rd of it as hamburger patties in the fresh mince meat section at my local Spar, to give it that smokey burger flavour).
  • 1 packet onion soup powder I had Knorr Onion 2 in 1 Stew Mix with Robertson's spices on hand, so I just used this.
  • 1 bag cheese of choice (You can buy bags of grated cheese in the store, but I just grated up a small block of Parmalat gouda cheese and bought sliced cheese for the top to show the separate portions. Alternatively you can just use pre-sliced cheese as that's what she did.)
  • garlic powder
  • 1/2 cup mayonnaise (We used Hellman's Light)
  • 1/2 cup heavy cream (I just used regular fresh cream)
  • 2 eggs

Method
 

  1. Preheat oven to 350°F (roughly 175°C)
  2. Brown meat and drain excess fat.
  3. After meat is cooked thoroughly mix in onion soup mix and garlic powder.
  4. If you're using grated cheese, mix in ¾ of bag now (she used sliced cheese so she layered it on top, I used grated cheese mixed in, and in a few steps I placed the extra slices on top).
  5. Place in casserole dish.
  6. Mix together mayonnaise, cream and eggs. Cover the top of the casserole with this mixture.
  7. Top with slices of cheese, or if you're using grated only then the remaining cheese.
  8. Bake for 40min. Serve and enjoy.
